Siman Tov

My eldest daughters’ head teacher was the most inspirational of her mentors. She and her husband were married young and were showered with much brachas and future of great promise. Tragically her young, brilliant, well-respected husband was severely injured in a car accident that left him paralyzed and unable to speak with breathing problems.

 

She chose to become his nurse, advocate, his Kollel Rosh Yeshiva and cheerleader.  Facing the reality of not having a home filled with children but instead with top of the line medical apparatus she turned her home into a source of Torah where the top Rabbiem pack her home learning with her husband through his limited communication skills and a mini shul.  She rewards all her visitors with warm tasty food and cake. In one of the back rooms she has made a meeting place for shiduchum, which she personally arranges for those in need the second time around or are medically challenged.

 

And then there are her pupils. She educates these young women to aspire to be wives that know how to create love by giving of oneself. Her words of Torah, as powerful and beautiful they are don’t even compare to purity of her own personality and deeds.

 

She shares not only Torah thoughts about women and marriage but also recipes helping these young women build up a repertoire for their future homes.

 

“A woman’s job is to supply the physical needs to the home.  By creating delicious meals for the family a woman can make the mundane into the sublime. Good tasty food is a tool to instill kedushah into our meals.  The hagim, Shabbes and Rosh hadosh are opportunities to partake of enticing meals and raise literally our spirits.”

 

The sim’yanim are an extension of this principle.  We play with the names of food and imbue blessings and sweetness into our new year.  May all the good signs brought to your table bring you the best of good times.

 Squash Candy – that the decree of our sentence be torn asunder and may our merits be proclaimed before You.

This recipe is from my daughter’s mechanecht (head teacher).  

Prep time: 10 minutes

Cooking Time: 2 ½ hours

Serving Portion: 8-10 to taste

2 med butternut squash cut into thickness of a finger

1 cup sugar

1 T honey

 

In a pot, just cover the squash with water and boil. Lower the heat so it remains a hot heat but not necessarily boiling for an hour.  Pour in the cup of sugar and stir.  Continue cooking at a low heat for another hour.  Be careful to check the water contents. When it is done it should look like candy.  Take the squash candy out. When it cools coat the top with honey so it should be glossy.

This recipe is from my daughter’s mechanecht (head teacher).  

 

Prep time: 10 minutes

Cooking Time: 45 minutes

Serving Portion: 8-10 to taste

 

7 stalks of beat leaves chopped into small pieces or ½ the amount with 3 leek stalks.

(You can do both vegetables together then just use ½ the amount of each)

1 med onion sliced

4 tbls breadcrumbs

2 eggs

Salt and pepper

Oil

 

Sauté the vegetables in oil.  Pat the leaves from excess oil. Grind with stick blender. Add the breadcrumbs, eggs, and seasonings. Continue blending until it makes a dough. (Like a potato pancake batter.) Make ½ inch balls and flatten them with a spoon.  Fry the little pancakes in oil in a frying pan.  Turn once until brown on both sides. Drain again.

 

Leek with Sesame Seeds

Prep time: 5 minutes

Cooking Time: 10 minutes

Serving Portion: 8-10 to taste

7 Leeks (if the size of scallions)

¼ cup olive oil

1 tsp salt

100 grams sesame seeds

 

Fry the leek in the oil for five minutes. Salt the drained leeks. Stir in sesame seeds.

This recipe is from my daughter’s mechanecht (head teacher).  

Prep time: 40 minutes

Cooking Time: 3 hours

Serving Portion: 8-10 to taste

 

¼ cup black eye beans after soaked and checked

½ cup sugar

2 tsp oil

Cover the beans with water. Add the oil.  Boil the beans for 3 hours on a slow boil.  After the 1st hour add the sugar and stir. Cook until the beans are soft and sticky. Serve cooled.

Prep time: 20 minutes

Cooking Time: 35 minutes

Serving Portion: 8-10 to taste

10 carrots cut into 1 “

3 tbsp margarine

1 tbsp brown sugar

½ tsp ginger

½ tsp caraway seed

1 tbls grated orange peel

2 tbsp orange juice

 

In pot place carrots add enough water to cover.  Bring to a full boil.  Cook over med heat until carrots are tender 10 – 12 minutes.  Drain. Return to the pot and remaining ingredients.  Cook over med heat stirring occasionally until heated thorough 4-7 minutes.

Prep time: 5 minutes

Cooking Time: 35 minutes

Serving Portions: 6

5 med fresh beets,

1-cup carrots peeled and grated in julienne style

1 tbsp chives (or scallions) chopped

½ tsp sugar

½ tsp dill

Pinch of pepper

2 Tbls of lemon juice

 

Mix the spices and lemon juice.  Pour over the vegetables and mix. Serve chilled.

Lettuce, Raisin and Celery Salad

This is my favorite adopted sinanim that we say (without directly using Hashem’s name): “let us have a raise in our salary”. It always seems appropriate time to remind ourselves who the real paymaster is.

Prep time: 5 minutes

Serving Portions: 6

1 head lettuce chopped

½ cup raisins

3 stalks celery chopped

1 tbls mayonnaise

Salt and pepper to taste

 

 

Mix the lettuce raisin and celery together.  Season and coat the salad with mayonnaise.  Serve chilled.

 

 

 

Tip: To cut a pomegranate clean without splatter and membrane excess, cut the crown off the fruit. Cut the rest of the fruit like an orange with 4 lines as to peel of the skin. Submerge the pomegranate in a bowl of cold water for a few minutes.  Under water break the fruit apart first by section and the separating the seeds from the membranes.  Throw out the water and the seeds that are the heaviest and therefore sunk to the bottom will be left.

 

Tip: Types of apples:

Honey crisp – crispy and sweet. Ideal for snacks and salads as well as baking.

Jonathan – crispy and tart. Good for cooking and sautéing

Golden – Sweet and yellow skin. They are also good for cooking or salads.

Red Delicious – large and juicy. Good for pies.

McIntosh – they start out tart and yellow in the beginning of the season and then turn sweet and red.  Great fresh for snacks and cooked for applesauce

Granny Smiths – green, juicy and tart.  Use them in salads and pies or fresh.
